@warmandrosy knows that no meal is complete without some ・・・ ✨ Balsamic stewed figs and chickpeas + cauliflower puree – a comfort food kind of Tuesday ✨Sometimes my random kitchen concoctions, born out of dwindling or suspect ingredients in my fridge/pantry, turn out to be the best meals. This was one of those meals…SO. GOOD. If you’re like me, you were a little overzealous buying all those in-season figs….like literally all of them ? I had a bunch that were starting to get a little squishy and a half head of cauliflower suffering the same fate. The result: this tangy, sweet, slightly pine-y and a little smoky flavor bomb of a dish. Recipe below. Have a great night! _____________________________________ Ingredients: 1 shallot, sliced 1 tbsp fresh rosemary, minced 1/2 tsp allspice 1/4 tsp smoked paprika 1 cup fresh figs, halved 1 15 oz. can chickpeas 2 tsp mustard 1 tsp honey (I used @wedderspoonofficial manuka) 1/3 cup balsamic vinegar 1/4 vegetable broth or water Salt + pepper Directions: (1) Heat olive oil over medium heat. Add 1 sliced shallot and sauté until softened, about 5 minutes. (2) Add rosemary, spices, figs, chickpeas and a pinch of salt and pepper and sauté until fragrant. (3) Add the mustard, honey and balsamic, stirring to scrape up any brown bits. (4) Add vegetable broth, reduce heat and cook until sauce is thickened. If mixture gets too dry, add a bit more broth. (5) Taste and add more salt and pepper, if desired. (6) Serve over cauliflower puree and sprinkle with more minced rosemary. This would also be delicious atop toasted sourdough! Serves 2.
