Yesterday I visited the aeroponic vertical farm in Newark and saw all the amazing things they are doing. Baby greens of all varieties are being grown without sun or soil, completely sustainably and without any pesticides. The greens are so clean and fresh they don’t need to be washed, just harvested, packaged and devoured…and they were the sweetest greens I’ve ever had. Not only that, @aerofarms has brought jobs and fresh food to massive food desert in my area. . . Today I’ve made a flatbread topped with a spicy spring mix. I didn’t want to do anything to the greens themselves because they’re so good on their own . . INGREDIENTS pizza dough (I bought some homemade from my local Italian deli) 2 heaping teaspoons olive tapenade a small ball of mozzarella, sliced a big handful of fresh mixed baby greens . . THE HOW-TOS Preheat your oven to 500F. Roll and stretch the dough until it’s thin (don’t worry about the shape, it looks rustic) Brush the dough with olive oil, spoon and spread on the tapenade on the dough, and top with mozzarella before popping in the oven for about 10mins. Take out, let cool for about 3-4 minutes and top with a heaping handful of fresh greens and another drizzle of olive oil
